More Pics . . .


Carowinds was by far the best theme park ever! We could not believe how nice and clean everything was~even the bathrooms! While we were eating our lunch, two people came up and asked if everything tasted ok. ($60.00 for lunch it better). Kristin rode as much as she could get on, Matt, only rode the white water rapids. Poor kid, he totally hates rides. We tried to bribe him $50.00 to ride one roller coaster; didn't work! We also had the most perfect weather. It was cloudy the entire day and muggy however, a couple sprinkles here and there managed to keep it comfortable.

Weekend updates

We hung out at the house this past weekend and worked in the garden, watched movies and I managed to make 6 dozen Blackberry cookies, canned 13 pints of salsa and canned 8 pints of blackberry jelly.

I also layed out in the sun on Sunday while reading A Wolf at the Table and I fell asleep. NO, it wasn't because of the book. The book is fantastic and really sheds light on my life growing up and my childrens lives as they grow up, however, whenever I am laying in the sun, its like I go into a "Sun coma" and I fall asleep for hours and I did, I burned up. Crispy fried!

Here are some of the movies I recommend if you haven't seen them:

Drillbit is hysterical and College Roadtrip is cute.

National Treasure . . WOW, great movie.

Semi-Pro I did not see however, my son and husband enjoyed it.

The Ruins was OK but Shutter was completely stupid. I sure do miss the good ole horror flicks!

This weekend we are venturing to Carowinds located in North and South Carolina. JD's employer gave us tickets, a parking pass and food money for a day of family fun. All we have to do is pony up for the uel! Not a bad deal huh?

This is Southwest VA's - Kings Dominion!

I am totally looking forward to the water park!!! Here I come wave pool!

Blackberry season!!!

Everytime I think about "Blackberry" season or Raspberry season, I think of the ever so popular phrase:

Wabbit season . . . duck season . . . Wabbit season . . . duck season

JD and I have been hard at work picking berries. Besides making jellies, I have been making cookies. Here is the recipe for blueberry cookies however, I make these cookies with Blackberries and added 2tsp of Lemon zest and WOW! These are a winner. (I love how the juice in the berries make them look like tie dye cookies). mmmm mmmm
Blueberry Drop Cookies (Blackberry Drop)
"A delicious alternative to chocolate chip cookies."

Original recipe yield 4 dozen
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup shortening
1/4 cup milk
1 egg
1 cup white sugar
1 teaspoon Vanilla extract
1 1/2 teaspoons lemon zest (2 tsp for Blackberry)
1 cup fresh blueberries (you can use frozen)

In a large mixing bowl, cream the shortening, sugar, egg, milk, almond extract and lemon zest. Mix well after the addition of each ingredient. Combine the flour, baking powder and salt; blend into the sugar mixture. Fold in the blueberries. Cover and chill for 4 hours.
Preheat oven to 375 degrees F. Drop dough by teaspoonfuls onto ungreased cookie sheets, about 1 1/2 inches apart.
Bake 12 to 15 minutes in the preheated oven. Let the cookies cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

I hate to sound like such a girl but I get totally grossed out by Ticks! When I see them on me, I shiver with grossness. My dogs constantly have them as I feel we live in the tick capital of VA. I was picking berries (as I do every night) and felt like something was constantly crawling on me. NOT being the responsible adult and "checking myself", I went to bed with this eerie feeling. Upon getting up on Tuesday morning, I decided to check my back as it had a burning sensation. Wouldn't you know it, a TICK. I totally freaked out and grabbed it and yanked it off. It was already attached. I sent him down the sink drain then hopped in the shower. Water hit my back where I ripped off the tick and talk about burns, its like sliding down a razor blade into a pool of alcohol. OMG, I wanted to scream. I get out of the shower and the tick had managed to crawl back up into the sink bowl! The tick that won't die!

I worked all day then got home to show my husband my mark. OMG, it is gross! The spot is inflamed with a huge red ring around it . . Great! I don't think it was a deer tick but I guess I will have to wait and see. JD asked me what the tick looked like and I said, UH gross, he was black, creepy and gross! I DONT KNOW.

Just my luck! I guess thats what I get for constantly going into the woods for those dang berries~

Rain . . Rain . . and more Rain!

This past weekend we got much needed rain! It rained on Friday, POURED all day Saturday and rained a little yesterday.

We managed to light off some fireworks (thank you rain) Saturday night and the kids and I went to the movies on Sunday since JD got called into work. We saw Hancock and absolutely loved it. The kids actually sat with me to watch it too! I was on my best behavior and neither one of them got mad at me for laughing too loud!
